Poached Pears and Lavender


  • 1.5 litres water
  • 3 cups caster sugar
  • 4 pears peeled and halved. Conference, comice, williams all cook well. Slightly under-ripe pears keep their shape better
  • Small handful of lavender buds
  • 3 bay leaves
  • creme fraiche
  • honey optional
  • strawberries/raspberries any berries you like for serving with the poached pears


Place water and sugar in a heavy based saucepan. Add pears, lavender and bay leaves. Cover and slowly bring to the boil then turn down and simmer for approx 25minutes , check pears for firmness preferred.


Remove from heat and allow to cool.


Serve with creme fraiche ( you could mix a little honey with the creme fraiche) and pop some berries on top.
